I am looking for something to cook tonight that includes chicken or beef. We are healthy eaters and dont eat too much pasta or unhealthy sauces. Any recipe ideas?? Thanks!!!

    Cowboy Beef:
    1. cut to 2x2x1" pieces
    2. fry in thin layer of extra virgin olive oil in high heat wit some onion pieces till outside turns brown. small amount each time to avoid moist accumulates
    3. add balsamic vinegar, 2tbl spoonful, add salt 2 tea spoonful, ginger 2 pieces
    4. add room temperature water to top the beef.
    5. stew for two hours, mid-low heat after boiling.
    6. use the broth to cook carrot, celery and potato, shape of your choice. add mushroom 2 min. before done
    7. serve with red wine.

    Confucius’ chicken:
    1. chicken drum sticks washed
    2. put in pressure cooker
    3. add water to top the meet or more
    4. add ginger, rosemary, and a piece of celery
    5. cover and cook for 8 min after steaming
    6. wait till cooker de-pressurized
    7. throw away the spices, use the broth to make your favorite soup
    8. peel the skin of the chicken and drop ginger flavored (rough ginger shredded abd add to)Japanese soy sauce
    9. serve with olive oil seared spinach and white wine

    Mmmm! How about a chicken soup?

    Buy a chicken breast at your local super market.
    Make sure you have carrots, celery, potatoes, peas, whatever you want in that soup, and you will need chicken broth or vegetable broth. Chop up all the veggies, and chop up the chicken, and add chicken broth or vegetable broth, and water.

    It will be yummy, I’m telling you!
    Chicken soup for the soul. =)

    mexican chicken

    Skinless chicken breast, grill in over with drip pan,

    while cooking,

    sautee tomatoes, green peppers and onions and corn….
    When done, top the chicken breasts with the veg mix

    Add a bake potato on side with some steamed broccoli or squash

    Savory Peach Chicken
    Copyright 2007, Ellie Krieger, All rights reserved

    1 tablespoon canola oil
    4 skinless, boneless chicken breasts, about 1 1/4 pounds
    1/2 teaspoon salt
    1/4 teaspoon pepper
    2 tablespoons brown sugar
    2 tablespoons low-sodium soy sauce
    2 tablespoons rice vinegar
    1/4 cup orange juice
    1 teaspoon freshly grated ginger
    2 cloves garlic, minced
    1/2 cup low-sodium chicken broth
    4 large firm-ripe peaches, cut into 1/4-inch slices, or 2 (10-ounce) packages frozen peaches, (about 4 1/2 cups)
    2 tablespoons sliced almonds

    Heat the oil in a large skillet over a medium-high heat. Season the chicken on both sides with salt and pepper, add to the skillet and cook until browned, about 2 minutes per side. Meanwhile combine the brown sugar, soy sauce, rice vinegar and orange juice in a small bowl and set aside. When the chicken is browned, transfer to a plate and set aside.
    Add the ginger and garlic to the pan and cook, stirring, for 30 seconds. Add the chicken broth, the soy sauce mixture, and the peaches to the pan. Turn the heat up to high and cook, uncovered, for about 6 minutes, stirring occasionally until the sauce is nicely thickened and the peaches soften. Add the chicken back to the pan with the sauce, turn the heat down to moderate-low, cover and cook for about 5 minutes, or until chicken is cooked through.

    In the meantime, toast the almonds in a dry skillet over a medium-high heat stirring frequently, until golden brown and fragrant, about 2 minutes.
    Serve the chicken topped with the sauce and sprinkled with the toasted almonds.

    Yield: 4 serving, 1 piece chicken, 2/3 cup sauce and 1/2 tablespoon almonds per serving

    Chicken Kebabs.
    4 Chicken Breasts.
    2T Soy Sauce.
    2T Dry White Wine.
    1 Clove Garlic Crushed.
    1t Fresh Grated Ginger.
    Chop chicken into 2cm (¾”) cubes. Mix in a bowl with soy, wine garlic and ginger and marinade for 1-2 hours.
    Prepare vegetables for kebabs. Mushrooms, tomatoes, peppers (bell), onions, pineapple, baby corn.
    Thread onto skewers and cook on the grill.

    Chicken Burgers with Fresh Fruit Salsa

    1/3 cup purchased sweet-and-sour sauce
    1 clove garlic, minced
    2 teaspoons snipped fresh cilantro or parsley
    1 teaspoon lemon juice
    1/8 to 1/4 teaspoon crushed red pepper
    2 medium peaches, peeled, pitted, and chopped (about 1-1/2 cups)
    1 pear cored and chopped (about 1 cup)
    1 tablespoon finely chopped onion
    1 pound ground raw chicken
    1/2 cup finely chopped onion
    2 teaspoons dried basil, crushed
    1/2 teaspoon seasoned salt
    1/4 teaspoon black pepper
    1/4 teaspoon bottled hot pepper sauce

    what you do:
    1. For salsa, in a medium bowl combine sweet-and-sour sauce, garlic, cilantro or parsley, lemon juice, and crushed red pepper. Stir in peaches, pear, and the 1 tablespoon chopped onion. Cover and chill up to 4 hours.

    2. In another medium bowl combine the chicken, remaining 1/2 cup onion, basil, seasoned salt, black pepper, and hot pepper sauce; mix well. Shape into four 3/4-inch-thick patties. Grill meat on the grill rack directly over medium-hot coals for 14 to 18 minutes or until an instant-read thermometer inserted in side of patty registers 165 degrees F, turning once. (Or, grill, covered, indirectly with medium heat for 20 to 25 minutes.) Serve burgers with salsa. Makes 4 servings.
