this is a recipe i’m using for oatmeal raisin cookies
vegetable cooking spray
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons unsalted butter
1/2 cup sugar
1/2 cup light brown sugar
1/4 cup unsweetened applesauce
1 large egg
1 teaspoon vanilla extract
1 1/3 cups rolled oats
1/2 cup raisins
could i substitute 2 egg whites for the egg to lower the cholesterol?

Yes, you can.
You can typically used 3 tbsp of mashed banana or pureed fruit for egg substitution in similar cookie recipes. But since you already have applesauce, its probably not a good idea for this one.
I’ve often wondered when I see these recipes, why bother with the substitution, unless you have a serious & uncontrolled issue with cholesterol.
One egg in a batch of cookies isn’t going to raise cholesterol, unless you are planning on eating the whole batch of cookies by yourself all in one go & do that frequently.
Research in the last decade has shown that eggs aren’t the real problem as much as trans-fats and saturated fats.
As oatmeal & fruit are of the foods recommended as a cholesterol lowering food, its pretty much a moot point to eliminate the one egg in a batch of oatmeal cookies.
Of course, if you like eggs and want to cut down here so you can have them for breakfast or elsewhere, then I see the point. Its a trade-off.

You are better off using the egg substitute mix, otherwise the dough might not bind well

I think you should go by the recipe. less egg might make your cookies crumble. and, what harm can an extra egg do?
