Please help! Whenever I cook cakes or fairy cakes rather than being light and fluffy in the middle they are kind of dense. They taste OK and are edible but how do I get them lights and fluffy! I do follow the recipe to the letter but its not quite working!
Already using margarine with no salt!

you need air in them
instead of mixing the flour in make sure you fold it in
also make sure you sieve it before adding it to your mixture
also use a Electric whisk and whisk your mixture for at least 5 minuets
that should add air and make them light and fluffy
also never open the oven door until it is time to take them out

Try using UNSALTED margarine.. that is if you are using butter or salted margarine.

When you pull it from the oven let it cool upside down. What is happening is as it cools it starts to collapse. Try this trick

when you add the flour to the creamed sugar and butter you need to fold it in otherwise all the air will be beaten out of the mixture

if you do not use salted butter or margarine, add a pinch of salt to the flour, add a teaspoon of baking powder too.
By the way your fairy cakes will not be like bakery cakes as they add enhancers to make them that fluffy yours will be naturally good homemade fare and will be a little denser but they will taste much better. Some of the replies are really old wives tales, apart from the folding in of course. I use the rubbing-in method and have no problems
