Fresh cream of tomato soup with basil.
sprays cooking spray
2 medium leek(s), chopped (white parts only)
8 medium tomato(es), ripe, beefsteak, cored and chopped (about 3 lbs)
1 tsp dried thyme
1 piece bay leaf
4 cup vegetable broth
12 oz fat-free evaporated milk
1/4 Tbsp basil, fresh, chopped
1/8 tsp table salt, or to taste
1/8 tsp black pepper, freshly ground, or to taste
1 Tbsp thyme, fresh (for garnish)
Instructions
Coat a large saucepan with cooking spray and set pan over medium heat. Add leeks and sauté until soft, about 5 minutes. Add tomatoes, thyme and bay leaf; cook until tomatoes break down, about 5 minutes.
Add broth and bring to a simmer; reduce heat to low, cover and simmer 10 minutes. Remove from heat and remove bay leaf.
Puree tomato mixture in saucepan using an immersion blender. Or, working in batches, puree tomato mixture in a blender until smooth (be careful not to splatter hot liquid); return puree to saucepan and set pan over low heat. Add milk and simmer 1 minute to heat through. Remove from heat and stir in basil; season to taste with salt and pepper. Garnish with thyme and serve. Yields about 1 1/2 cups per serving.
****When tomatoes are out of season, use two 14-ounce cans of diced tomatoes instead

selection of vegs e.g. carrots, onion, celery, leeks to make a stock
Plum tomatoes and basil leaves
Cream
Put all your veg into boiling water and boil for about 1 hour.
After 1hr, drain your vegs, making sure you keep the water/liquid.
Put the liquid in a saucepan over theheat and add chopped tomatoes. Mix well.
Put the mixture into a blender and blend until it becomes a soup consistancy, if not, add a little bread to harden it up.
Add the basil and cream and bobs your uncle.

i usually make a tomatoish soup with crushed tomotoes. its super easy and pretty healthy i start off by boiling chicken in a pot of water as thats boiling i skim the fat off the top. after a while i add barley, onions, basil, bay leaves and the crushed tomatoes and carrots and parsnips. then after that starts boiling i put it on simmer for about 45 minutes and add some froxen mixed vegetables. (for the ingredients i just add as much as i want) oh and dont forget after the 45 minutes take the chicken out and get the good stuff off the bone and put it in the soup.
