You’re pretty well stocked there;) Try these Blondies. They’re very "forgiving" and you can use whatever you like as the "add-ins". I’ve used mixtures of different flavored chips (even M&Ms) and nuts, or no nuts – whatever you feel like that day, or have on hand:)

    BLONDE BROWNES
    2 c. unsifted flour
    1 tsp baking powder
2 c. firmly packed brown sugar
    2 slightly beaten eggs
    1/4 tsp baking soda
    1 tsp salt
2/3 c. shortening, melted (or vegetable oil)
    2 tsp vanilla
1 cup chocolate chips (or whatever you like)
1/3 c. chopped nuts (or more chips)

Mix all ingredients in large bowl until well blended. Spread in greased (sprayed) 9×13" pan and bake at 350 about 30 min. Cool and cut into bars

    Lemon Bar

    3 cups flour
    1 sick melted butter
    1 cup powdered sugar
mix well and press into greased glass bake pan, bake at 350 foe 8 minutes. while this is baking mix together

    4 eggs
    2 cups sugar
    1/3 cup lemon juice
    1 Tablespoon baking powder
    3 Tablespoons flour
Beat together with hand mixer until fluffy. Pour over crust, return to oven and bake another20 to 25 minutes or until filling is set. {to check, just stick a clean butter knife in the middle of bars, if it comes out clean it’s set} Remove from oven and sprinkle with powdered sugar. Strawberry Cake with Pink Buttercream Icing

    Cake:
    1 c. butter (softened)
    2 c. sugar (granulated)
    3. c. flour (self-rising)
    4 eggs
    1 c. milk
    2 teas strawberry extract

Heat oven to 350. Grease and flour cake pan. In a large bowl, beat butter and sugar together until fluffy. Add eggs, one at a time, beating well after each addition. Alternate adding flour and milk, beginning and ending with flour. Mix well after each addition. Stir in strawberry extract. (Depending on how strong you would like the strawberry flavor to be, more extract may need to be added… taste-test the batter to see) Pour into pan and bake 30-40 minutes, or until toothpick inserted in center comes out clean.

    Icing:
    1/2 c. butter, softened
1 lb or 4 c. powdered sugar, sifted
    1 teas vanilla extract
    milk
    red food coloring

Beat together butter, sugar, and vanilla until smooth. Add milk one teas. at a time to get a spreadable consistency. Add food coloring 1 drop at a time to achieve desired color.

You could also top cake (with or without the icing) with strawberry whipped cream:

    2 c. whipping cream
    1/3 c. powdered sugar
    1 teas strawberry extract

Beat cream and sugar on high, preferably with a whisk attachment, until stiff peaks form. Beat in strawberry extract, and refrigerate.

Allow yourself at least 3 hours from start to serving time. You will need time for the cake to cool before frosting, and time for the icing to "set" afterwards. Also, don’t ever wait too long to ice a cake- ice it as soon as it is cool enough not to melt the icing. Otherwise it will turn out dry.

    Hope this helps…
