Okay, I am cooking for my parents in two weeks and I want to prepare something easy, but delicious that they wouldn’t expect me to cook.I want to keep the cooking time down to an hour. I want it to be light, healthy, and tasteful. If you have to, forget about the light and healthy part, just make sure that it tastes good! Thank you, you are helping me so much! Oh, and the dessert, it doesn’t matter how fattening it is, I just want it to taste amazing. They think I can’t cook, so I want to prove them wrong! Thanks Again! ~ April!
I see that a lot of you are putting seafood in, try to lay off the seafood just a tiny bit. My family really doesn’t eat it. But thanks for all of your ideas! It’ll be really hard to choose the best answer! Thanks!

Soy Ginger Salmon
Serve with baked potatoes.
Salmon is marinated in soy, brown sugar, juice, spices, and fresh ginger; then broiled to perfection! My family and friends rave about this fish with every bite. Even my husband, who wouldn’t eat salmon, now asks when we’re having it again. Please try, for you and your family’s health
INGREDIENTS
1 pound salmon fillets
1/3 cup brown sugar, divided
2 teaspoons lemon pepper, divided
1 teaspoon garlic powder, divided
1/3 cup low sodium soy sauce
1 tablespoon olive oil
1 (1 inch) piece fresh ginger root, minced
1/3 cup orange juice
DIRECTIONS
Rub salmon with about 1 tablespoon brown sugar. Lightly sprinkle with lemon pepper and garlic powder; rub seasoning into fish.
Into a small saucepan set over medium heat, pour soy sauce and olive oil. Stir in ginger and remaining brown sugar, lemon pepper, and garlic powder. Bring to a gentle simmer, stirring constantly until sugar has dissolved. Remove from heat, stir in orange juice.
Place fish and marinade into a resealable plastic bag, seal, and refrigerate overnight, or for at least 3 hours.
Preheat broiler. Place fish in a foil-lined baking pan. Reserve marinade.
Broil fish skin-side up, 2 minutes. Remove from oven, pull skin off with tongs. Baste with marinade, return to oven, and broil 2 minutes more. Turn fish, and broil until fish flakes easily, about 4 minutes. Remove from oven, and let sit 5 minutes before serving.

Garlic Chicken Stir Fry
INGREDIENTS
2 tablespoons peanut oil
6 cloves garlic, minced
1 teaspoon grated fresh ginger
1 bunch green onions, chopped
1 teaspoon salt
1 pound boneless skinless chicken breasts, cut into strips
2 onions, thinly sliced
1 cup sliced cabbage
1 red bell pepper, thinly sliced
2 cups sugar snap peas
1 cup chicken broth
2 tablespoons soy sauce
2 tablespoons white sugar
2 tablespoons cornstarch
DIRECTIONS
Heat peanut oil in a wok or large skillet. When oil begins to smoke, quickly stir in 2 cloves minced garlic, ginger root, green onions and salt. Stir fry until onion becomes translucent, about 2 minutes. Add chicken and stir until opaque, about 3 minutes. Add remaining 4 cloves minced garlic and stir. Add sweet onions, cabbage, bell pepper, peas and 1/2 cup of the broth/water and cover.
In a small bowl, mix the remaining 1/2 cup broth/water, soy sauce, sugar and cornstarch. Add sauce mixture to wok/skillet and stir until chicken and vegetables are coated with the thickened sauce. Serve immediately, over hot rice if desired.
Classic Cherries Jubilee
This is a great, refreshing dessert especially after a hearty meal. This does have to be prepared immediately before serving, but does not take a lot of time. Your guests will enjoy the blue flames when the brandy is ignited
INGREDIENTS
1/2 cup white sugar
2 tablespoons cornstarch
1/4 cup water
1/4 cup orange juice
1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
1/2 teaspoon finely grated orange zest
1/4 teaspoon cherry extract
1/4 cup brandy
3 cups vanilla ice cream
DIRECTIONS
Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.

Bananas Foster
INGREDIENTS
1/4 cup butter
2/3 cup dark brown sugar
3 1/2 tablespoons rum
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
3 bananas, peeled and sliced lengthwise and crosswise
1/4 cup coarsely chopped walnuts
1 pint vanilla ice cream
DIRECTIONS
In a large, deep skillet over medium heat, melt butter. Stir in sugar, rum, vanilla and cinnamon. When mixture begins to bubble, place bananas and walnuts in pan. Cook until bananas are hot, 1 to 2 minutes. Serve at once over vanilla ice cream

Easy Shrimp Dinner:
INGREDIENTS
2 1/2 cups water
3 cubes chicken bouillon
3 pounds shrimp, peeled and deveined
1/3 cup chopped green onion
1/4 cup soy sauce
salt to taste
1/4 cup cornstarch
1/4 cup cold water
12 ounces trimmed snow peas
4 small ripe tomatoes, diced
DIRECTIONS
In a large saucepan, heat 2 1/2 cups water to a boil over medium-high heat. Dissolve bouillon in boiling water. Add shrimp, green onion, soy sauce and salt. Boil for 3 minutes.
Dissolve cornstarch in cold water; stir into shrimp mixture. Cook until sauce is thick, then add tomatoes and snow peas. Serve hot.

Super Duper Easy Apple Cake:
INGREDIENTS
1 (18.25 ounce) package yellow cake mix
1 tablespoon ground cinnamon
1 teaspoon vanilla extract
2 Granny Smith apples – peeled, cored and finely diced
DIRECTIONS
Prepare cake mix according to package directions for a 10 inch tube pan. Stir in the cinnamon and vanilla extract, then fold in the chopped apples.
Pour batter into prepared pan. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Do you all like seafood? Light, healthy and easy sounds like a shrimp stir fry to me. Grab your favorite veggies and some fresh shrimp, and add pasta if you like. Lemon juice, olive oil and a little garlic and you are all good to go.
For desert, try this Hummingbird cake; it tastes amazing and looks beautiful!
INGREDIENTS
3 cups all-purpose flour
2 cups white sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/4 cups vegetable oil
3 eggs
1 (8 ounce) can crushed pineapple with juice
2 cups diced bananas
1 cup chopped pecans
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12 cup Bundt pan.
Measure flour, sugar, soda, salt, cinnamon, oil, eggs, vanilla into mixing bowl. Beat until smooth. Stir in pineapple with juice, bananas, and pecans. Pour into prepared pan.
Bake in oven for about 70 minutes. Turn cake out onto rack or plate after cooling for 20 minutes. Cool, and ice with cream cheese icing.

There are lots of tasty and easy recipes on this link, its better to have a general theme for your night like Italian or chineses or whatever. Hope this helps.

This is so…. easy to make and delicious =0)
Death by Chocolate
1 box chocolate cake mix
4 sm boxes of Instant Choc. pudding
4- 8-oz. cool Whip
* oreo cookies crumbs (optional)
* melted chocolate (optional)
* chopped heath bars (optional)
* chocolate chips (optional)
This really looks nice in a glass pyrex dish or a trifle bowl.
Bake cake according to directions.
and prepare pudding according to box.
When cake is cooled.
Layer as follows:
half the cake – crumbled
half the pudding ( 2 boxes prepared)
16 oz. cool whip
optional ingredients
Repeat-
* If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips. I added oreo cookie crumbs and leftover melted chocolate in between the layers.
