I am 14 and im gonna cook dinner for my family. However, i think my choice of dishes are a little too heavy. Im thinking of couscous lasagna, quiche and cheesecake. Can someone suggest a lighter sidedish/ maindish/ dessert and a good recipe? thanks:) or any changes?? i need it to be easy.. Also, my dad cant eat spinach/ nuts (he has gout) so can anyone suggest a recipe that fits that? thanks:)

MAIN: Breaded Chicken Breasts served over rice.

Buy boneless/skinless chicken breasts (you can get thighs if your family prefers the dark meat). Make an egg/milk dip like you do for French Toast. Dip them in the egg/milk dip, then coat in bread crumbs. Fry them in a skillet over med-high heat (with oil enough to coat the bottom of the pan) for about 4-5 mins on each side. When done, place them on a bed of rice (that you have cooked of course!) and lastly carefully dribble some LEMON JUICE on top of each slice of meat. Not a LOT, just a few drops on each piece. It really makes them taste special!

SIDE: Tomato/Cheese: You can use either fresh tomatoes or canned tomatoes. Place tomatoes in a microwavable bowl (how much? Depends on how many you are serving!) For each 15-oz can of tomatoes (diced) add about 1/2 tsp seasoned salt and mix in. Top with grated cheddar cheese. Microwave for about 5 minutes, until cheese is melted and tomatoes are hot. Serve.

DESSERT: TRIFLE (or if you want individual glasses, then Parfaits). In a glass bowl (see link below to see what a TRIFLE looks like, you can use a different serving bowl)… LAYER these items as follows:

CAKE: can be any cake, sponge cake, pound cake, even brownies if you’d like, or lady fingers, even biscuits will do. You can buy these at the supermarket in the freezer case or bakery section.

CREME: ANY flavor of pudding, creme fresh, yogurt.

    FRUIT: ANY fruit you’d like.

MISC: (optional): candies, sprinkles, chocolate chips, cookie crumbs

Top with whipped cream… and VOILA!!! A Trifle!

    That’ll be 5-cents, please.

Just do a baked spaghetti. Boil the noodles, add your fave sauce, top with a mix of Italian cheeses and bake covered(with foil) until the cheese has melted and bubbly(25-30 minutes usually). Serve with side garden salad and/or cheesy bread.

*My fave sauce to use with this is -Prego’s Veggie Smart:Sooth & Simple.
*And if you have any. Once it has cooked and you are plating. Can garnish with some fresh chopped Basil.
*If you want a more hearty non-vegetarian option. Bake some meatballs that can be added onto it.

Dessert–Brownies w/or w/out nuts. Strawberry cheesecake or tart.
