Archives for Cooking Low Carb category

I have been living a low carb lifestyle for almost 6 months now. I am down about 60 pounds and I feel amazing. However, I am beginning to get bored with food, so I am on the hunt for new recipes. I have found a lot that call for maybe 1/2 cup or less of panko bread crumbs. Is it possible to substitute that for something a little less carb friendly? Can I completely omit it? Any and all low carb suggestions are appreciated!! Thanks so much!
I found recipes for cheesy cauliflower pancakes, zucchini cakes, baked asparagus..I know it is only being used to ‘hold’ the recipe together, I am just wondering if there is something out there that does the same thing.

I’ve been on a low carb/low fat diet for the last month or so and lost a quite a bit of weight i felt good about myself. i hate my dad for cooking fattening stuff and making me eat it i actually want to cry. today i had a banana and some spaghetti with tomato sauce(no cheese beause i hate it) it was in a smallish bowl and not quite full. i dont know how many calories it was and i cant go and check the grams/calories in the pack cuz my dad threw it away and it might look weird if im digging through the garbage. i can feel myself growing bigger by the second and im trying really hard not to cry. i will not weigh myself cuz im scared. so how many calories would it have been and will a medium portion make me gain weight cuz i havent had carbs in a long time? if i dont have anything else today can i still lose weight?
well it was tomato sauce

What to make with tofu?

What can I make with fresh tofu?
I’ve never eaten or cooked tofu before, but my boyfriend randomly bought some the other day saying he wanted to try it, although we are both meat eaters. I’ve had a look on the net for some recipes but most seem quite complicated, using ingredients I’ve never heard of or that I dont want to buy in just for this one meal!

Any simple cooking ideas/recipes would be gratefully received! We love veg and we’re both trying to follow a fairly low-carb diet at the moment.

Many thanks to all who reply!

I’m trying so hard and now i’m so discouraged and upset that i want to just cry and throw in the towel.
All day i’ve kept my BS under 120 so I was stunned when I checked it after lunch that it was 148! This is what I ate; peas-carrots mixed,(10 carbs 4 sugars but ate more then the serving size of 2/3 cups) very small amounts in a bag, a low carb tortilla (7carbs 0 sugar). A bit later I had a piece of dark chocolate that is 85 percent cocoa (13 carbs, 3 sugar) I didnt even have the full serving, then I had 3 little cheetos..nothing else! What did I do wrong? I’m afriad I may of crossed the line into diabetes as right now I am insulin resistant. I will check in one hour to see what happened. I’m so very hungry though. I ate at noon and i’m weak and starving and shaking feeling. I’m cooking some dream fields which seems to be good on my Bs and some meatballs, soon they will be done and I can eat and thank God for that! But where did I go wrong? the carrot and pea mixture? the low carb tortilla? i’ve eaten more carbs then this at one meal and never had this high of a reading that i can ever remember? could the few cheetos of done this? I didnt wait an hour to test after the cheetos cause i didnt think they would even register..help!
SO What should my levels be for insulin resistant compared to normal person?
I was at 138 then one hour later was 131, 2 hours 130 and 3 hours 92 and starving again
so need to eat!
I’m so bummed! Maybe I didnt eat enough food???? I had green beans, sliced deli meat and some dream fields and half a cup of milk. Before I started i was 86! I was feeling funny and shaking, lots of anxiety…about half an hour later I was still so hungry so I caved in because i was out doing errands and had a grilled chicken wrap from wendy, it finally filled me up! 90 mns later I tested and I was at 113. I’m hungry again, ugggh, why am I always hungry?

Hello there!

My daughter is now 2 1/2. She has always been healthy, No allergy of any food and has never gotten too ill. Common cold here and there. She is very tall. Must have gotten it from my husband and I. She is in the 98 percentile in height and 84 percentile in her weight. ( from a week ago during her last doctor visit)

In my opinion she is no where over weight as she is a very tall. But I feel that it can eventually get there in few years. I have always battled with my weight and been feeding her not so healthy food all her toddler years. I feel terrible and feel disgusted the fact that I’ve been neglecting her future eating habit. She loves fruits very much and can eat bowl full of it any time of the day but she has terrible phobia with vegetables. She won’t even eat a piece of onion in her spaghetti.

To fix this problem I’ve tried making her juice with fresh fruits and vegetables with a juicer. She hates and can taste even the littlest amount of vegetables in her juice. I’ve tried over cooking vegetables and smashing it and mixing it in her food. At first I thought she was doing okay. Like, I use to cook broccoli and smash it and put it in her home made mash potato and call it the "green" food.

Then my husband who doesn’t know any better called it broccoli mash potato. Ever since that she was done with anything that was green. She doesn’t even eat a fruit snack that’s green sometimes. It’s a very odd behavior I can’t understand.

Anyways… Ive bought all the tools to make her food that’s more healthy. I am now making her fruit sorbet instead of ice cream and giving her low fat/ low carb yogurt as a treat.

See.. the problem is.. I spend over 10 times more in the kitchen then I use to. I am constantly making next meal or snack for her but nothing satisfy her. She keeps asking for fruit snacks, gold fish crackers, and cereal bars that are usually load with sugar.

I am getting frustrated and can’t bare to waste any more food by trying to make something for her al the time…

I was thinking about seriously just not giving her anything until she gives in to eat vegetables. I have no idea how long that would take but my mom is totally against it.. she thinks this will just traumatize her from eating healthy..

hmm.. any advice or input would be greatly appreciated it!

"So I have gestational diabetes. I already had it in my first pregnancy so I was kinda prepared for this"… or so I thought. My problem now is that all the recipes I used during my first pregnancy had to be prepared by either grilling, cooking or baking and lets be honest who wants that kind of work when they are 30 weeks pregnant and the general temperature is about 95 degrees outside and its kinda hard to keep the house cool. So does anyone have any good summer recipes for salads or some no cook food that wont drive my blood-sugar into the sky. Maybe some low carb smoothies or something similar.
My first pregnancy was during the winter so it didn’t bother me as much to cook.
Please only serious answers and be nice :)

i’ve found a recipe for crumbed sausages that i would like to try but i have no idea of what to cook to go with them. especially since my house mate has decided to go low carb and does not want potatoes with them (she thinks there will be plenty of carbs in the crumb coating of the sausages)

ok tell me what i can do with this that’s low fat, low carb and high in protein. i need some magic, fast to cook, easy to prepare, daily dish for my workout with weight training, jogging, and HIIT(high intensity interval training).

220g of chicken breast boneless skinless(240kcal)
25g of low fat mozzarella cheese(60kcal)

I have a frying pan, an oven, a microwave and aluminium foil. i dont want to add seasoning much and i can remove/change the cheese.

this was what i did, i oven baked the chicken stuffed with mozzarella cheese and wrapped in aluminium foil and BOY WAS IT DISGUSTING! so im thinking of other methods of cooking now, fast, easy, healthy. thanks :)
i also have olive oil, parsley, lemon juice.

My sister has recently had a slightly higher cholesterol, would this help lower it? Also she is vegetarian

Breakfast choices: 1% milk with cherrios , low fat cream cheese on whole wheat bagel, English muffin breakfast pizza low fat cheese and tomato sauce.

Lunch: Whole wheat veggie sandwich with lite mayonnaise and fat free american cheese, Steamed vegetables with low fat sour cream with a carb control veggie wrap, stir fry noodles subbing the oil with cooking spray.

Dinner: Whole wheat pasta with marinara sauce & mashed potatoes, eggplant pasta & steamed broccoli, fresh lettuce and tomatoe with baked crushed beans low carb tortilla burrito.

snacks : apples & low fat yogurt.

Is this a good plan?

I am in the middle of moving and my kitchen is somewhat packed. I’m roughly six weeks pregnant and buying South Beach meals to eat. I’m also taking prenatals and eating a lot of fruits and vegetables in addition to the meals. Is this healthy? I would like to stress I am not low carbing, I just want healthy meals without the cooking for the next few weeks. Anyone else do this? Are another brand of meals a better choice? I dont do well with sugar carbs and lost a ton of weight before on a low carb diet before, thus choosing phases 2 and 3 of southbeach. Any input would be great, thanks.
oh, sorry i meant to say im not trying to lose weight, i just want a good balanced meal as a base. are these meals ok?
