I love cookie dough … so while I have tried restraint, I am now trying to figure out a recipe to reduce the calories, so I can still indulge a bit.
I have found recipes out there for "lighter" chocolate chip cookies, but it seems they are limited in their "lightness" by the fact that people actually want to cook them and get the right texture, I am just looking for a lighter recipe for cookie dough, to be eaten raw, so it should be easier to substitute.
My thoughts so far have been to replace the butter with unsweetened apple sauce, the sugar with splenda and a touch of molasses. Anyone have other ideas ? A complete recipe ?

on last week, I did Religious Education about Diwali.This was the story of Diwali and making on Indian traditional sweets and Diwali story related Art activity. I prepared the whole class activity of storytelling with pictures and the small group sessions are making sweets and colouring activity.
First, I used the teacher laptop and I selected the picture of Diva lamps then I displayed the picture of burning diva lamps on the interactive whiteboard because the word Diwali means "rows of lighted lamps”. So I showed that picture with children. The class teacher read my preparation of Diwali story and I assisted to the teacher to realise the characters name, which was the mother of Hindu’s God, king of Lanka and Ayodhya and helping monkey warrior. I brought Indian traditional costume for children and adults. I showed them and I shared the information about that costume.
The teacher already got the sand clay in the classroom. She explained to the children, how to make the Diva lamps? The children understood their task and they made the creative Diva lamps from sand clay.
I did a cooking activity in two times with the two groups of children. That was the making on sweets (Pudding). I read clearly with the children about the name of the recipe, ingredients and the direction of cooking. I demonstrated with them about the cooking method. I shared the information and encouraged the children who were interested and involved on making that recipe.
The children enjoyed that activity and they shared their Social, Physical, Intellectual, communication/creativity and Emotional feelings.
The teacher and I discussed the risk assessment policy so I followed the health and safety rules and regulations in that situation. I didn’t use nuts and allergy ingredients.
I helped to the teacher and the TA to wear the sari (Indian traditional costume).
Children needed to know the more information about that material then I explained them and I communicated well in that classroom situation.
I worked with the small groups of children their Art activity, which was the people were watching the fireworks. This was the Diwali story related activity.
The teacher invited to the class B children in my class and they were come and shared their knowledge of Diwali. I and the class teacher were served that sweet recipe with the two class children. The children were enjoyed that situation.
The teacher encouraged my every work on that day. Finally, the children and the teachers were thanked me to the preparation of Diwali activity.
I felt happy and I hope, that day was the very special for the children in the school situation.

My husband and I are newly weds, and I used to cook everynight. I currenly took on a good job, but it keeps me really busy. Along with my other commitment such as the gym 3 nights a week. Ordering out became a habit, but weight gain quickly followed for both my husband and I. I would love to get back into cooking nightly, but with work and the gym it has been very hard. Mon, Wed, and Fri I am home by 7pm, and Tues, Thurs I am home by 5pm… So for the nights I am home at 7, I need some fast healthy recipes! (Something I could put in the slow cooker all day would be nice, so we could eat as soon as I got home) FYI – My husband isn’t a salad person, otherwise this would be easy!! lol…

I made a batch of barley candy last night. All the pictures I have seen of it are light brown.
You take water that you cooked barley in, and make hard candy from that – but mine turned dark brown. I cooked it up to 300 degrees just like the recipe stated, and in the last 20 degrees the color went crazy (and it tastes slightly burnt).
Any ideas before I try another batch? I think the thermometer is good, I use it all the time for other things that turn out good.

Is it possible that the candy was done before it hit 300 then? That’s the temp the recipe called for. If so, how would I know when it is done?
I use the same pot to make caramel. It is glass, and I like it because I can get it surgically clean. So I don’t think that was it. Barley turned out really nice. I’ll calibrate the thermometer again with boiling water.
I’ll check out those directions next.

Since I got laid off I’ve been gaining weight. I think I’ve gained 15 lbs. in about 4 months. I can’t fit into my wedding dress LOL!
So, I was wondering what your favorite healthy recipes are. I love grilled fish with brown rice & green beans but I’m looking for some alternatives. Or just different ways to prepare fish, chicken or beef without a lot of fat involved. Thanks peeps!

I would like to recommend an easy to cook, tasty oriental stir fried duck recipe to replace the boring hard and dry turkey meat and the unhealthy preserved ham for this Christmas Party instead.
-Cut whole duck into small pieces
-Stir fry plenty of sliced ginger till brown and add in the duck
-Stir fry the duck for about 15min and pour in 3/4 bottle of (Jiu Jiang) rice wine
-Continue to stir fry for 5min then cover the wok to simmer for 10min
-Add in sliced chilli padi and minced garlic and continue to stir fry in medium fire till fragrance
-Pour in 2 tablespoon of light soy sauce & 1 teaspoon of dark soy sauce and continue to fry till fragrance
-Sprinkle 1 teaspoon of sugar into the wok & stir well for 15sec
-Mix 2 teaspoon of flour into 2 tablespoon of water and pour in the mixture slowly into the frying wok and stir well for another 10sec
-Sprinkle lots of chopped spring onions and mix them well with the duck in the wok before serving
-Garnish with Chinese parsley on top of the duck on a plate and serve immediately!
Anybody prefer this dish then turkey? It taste so good with Red or White wine even if it turns cold!
